"Greek Quesadillas" from: "A Couple Cooks"

Tonight I made "Greek Quesadillas" for dinner and my family loved them. Greek food has always been a favorite in this house, so when I found this recipe, I knew it would be a hit. This was such a flavorful and healthy meal that you could find at a restaurant, its so good.

Changes I made to the recipe:
Instead of putting all the ingredients on the tortilla, i caramelized the onions then added 1/2 cup diced canned tomatoes and then the spinach (2 big hand fulls) and then about 1/2 cup of chicken stalk and let it reduce then added shredded chicken. Oh and i also added 1tsp of Greek seasoning to the spinach mixture.

"2 Minute Chocolate and Salted Carmel Mug Cake from 'The Family Kitchen'"

Yes, microwave mug cake isn't exactly my definition of cooking but it looked so good and I actually found time for it! (2 minutes to be exact)

This recipe took me about 10 minutes to make which included 2 minutes of me trying to find the expiration date on the carton of eggs, not remembering that its on the side where it always is... Anyways, after the two minutes of starring into the microwave, waiting for the cake to be ready, I took a few pictures (not very good  because my good camera wasn't working). I finally tasted the cake and it was THE BEST mug cake that I have made. Very chocolaty :) (I'm a sucker for anything chocolate).

Total time:
10 minutes

Serving size:
1 (maybe two, if your nice)

Problems:
-Most of the Carmel sunk to the bottom (that didn't bother me, it still tasted fine!)
-Slightly gummy texture but your bound to get that on almost all microwave cakes.

Poached Pears

I know my blog is supposed to be about other peoples recipes, but I couldn't stand looking at this poor empty blog and I couldn't make anything for a little while so this first recipe is my very own, its very simple, classy, and actually good for you!

Poached Pears


Ingredients:
2 cups apple juice
1/4 tsp cinnamon (or one cinnamon stick)
1/2 tbsp lemon juice
1 tbsp honey
2 Pears

Directions:
1. In a small saucepan (if you only have a medium one, then double the amount of everything except the pears), stir together the apple juice, cinnamon, lemon juice, and honey. While waiting for the mixture to a simmer, peel the skin off of the pears.
2. Once the apple juice mixture is to a simmer, place the pears in the saucepan. (If you want the pears to cook faster, place a lid on the saucepan.)
4. Check on the pears every five minutes or so to turn them over. (If it looks like the juice has reduced a lot, then add some water.)
5. After about 30 minutes, the pears should be done. They should be very delicate and make dents whenever touched.
6. Serve by themselves, with whipped cream, or ice cream. Enjoy! (P.s. the juice left over makes EXCELLENT apple cider)
